Royal Feast of Complete Manchu-Han Courses 满汉全席

If you love Chinese food, you will love this feast. It is one place that you can taste hundreds of different delicious Chinese dishes. This is the famous 满汉全席 Mǎn Hànquánxí “Royal Feast of Complete Manchu-Han Courses”.

Well, it actually originated in 清朝 Qīngcháo Qing Dynasty when Manchus seized the power to rule China, and the emperor wanted to unite Manchu 满 Mǎn, and Han 汉 Hàn together to build a stronger empire.

The feast was first held by royal families to treat guests with the best dishes from both Manchu menus and Hen menus. The two sides of dishes were arranged separately first. They were gradually mixed together and eventually combined into a complete feast that offers up to 196 main dishes and 124 snack dishes. The whole duration of a grand feast could be as long as three days. Guests could socialize with each other between meals. There were also various shows for guests to entertain during each meal.

Today, people still use the name of 满汉全席 Mǎn Hànquánxí on big feast prepared for large events. The menu has been changed to meet modern needs. Some traditional dishes that required wild animals were also excluded, such as “monkey brain”, “shark fin” and “bear paw”.

四鲜果碟:橘子、青果、石榴、鸭梨。

sì xiān guǒ dié: júzi、 qīng guǒ、 shíliu、 Yā Lí。

 

四糖饯碟:苹果、莲子、百合、南荠。

sì táng jiàn dié: píngguǒ、 liánzǐ、 bǎihé、 nán jì。

四果品碟:白桃仁、茶尖、松子仁、桐子仁。

sì guǒpǐn dié: bái táorén、 chá jiān、 sōng zǐ rén、 tóng zǐ rén。

四蜜饯碟:白橘、枇杷、绣球、青梅。

sì mìjiàn dié: bái jú、 pípa、 xiù qiú、 qīng méi。

 

四高庄碟:红杏仁、大青豆、小瓜子、白生仁。

sì gāo zhuāng dié: hóng xìngrén、 dà qīngdòu、 xiǎo guāzǐ、 bái shēng rén。

 

四望菜碟:干酪、白菜、桃仁、杏仁。

sì wàng cài dié: gānlào、 báicài、 táorén、 xìngrén。

四样面饭:盘丝饼、蝴蝶卷、满汉饽饽、螺丝馒头。

sì yàng miàn fàn: pán sī bǐng、 húdié juǎn、 Mǎn Hàn bōbo、 luósī mántou。

点心:头道:一品鸳鸯、一品烧饼,随杏仁茶。二道:炉干菜饼、蒸豆芽饼,随鸡馅饺。三道:炉牛郎卷、蒸饼,随圆肉茶。四道:炉烙馅饼、蒸风雪糕,随鱼丝面。

diǎnxin: tóudào: yīpǐn yuānyang、 yīpǐn shāobing, suí xìngrén chá。 Èrdào: lú gāncài bǐng、 zhēng dòuyá bǐng, suí jī xiàn jiǎo。 sān dào: lú Niúláng juǎn、 zhēng bǐng, suí yuán ròu chá。 sì dào: lú lào xiànbǐng、 zhēng fēng xuěgāo, suí yú sī miàn。

四拼碟子:盐水虾、佛手蜇、松花蛋、芹菜头、南火腿、头发菜、白板鸭、红皮萝卜。

sì pīn diézi: Yánshuǐ xiā、 fú shǒu zhé、 sōnghuādàn、 qíncài tóu、 nán huǒtuǐ、 tóufa cài、 báibǎn yā、 hóng pí luóbo。

十六个小碗:红烧美人蛏干、炒雪花海参、炮炒螺丝鱿鱼、炒金钱缠虾仁、烩青竹猴头、锅贴金钱野鸡、蜜汁一品火腿、烧珊瑚鱼耳、金银翡翠羹、溜松花鸽子蛋、虾卧金钱香菇、烧如意冬笋、烩银耳、炸鹿尾、烩鹿蹄、烹铁雀。

shíliù gè xiǎo wǎn: hóngshāo měirén chēng gàn、 chǎo xuěhuā hǎishēn、 pào chǎo luósī yóuyú、 chǎo jīnqián chán xiārén、 huì qīng zhú hóu tóu、 guōtiē jīnqián yějī、 mì zhī yīpǐn huǒtuǐ、 shāo shānhú yú ěr、 jīnyín fěicuì gēng、 liū sōng huā gēzi dàn、 xiā wò jīnqián xiānggū、 shāo rúyì dōng sǔn、 huì yín’ěr、 zhá lù wěi、 huì lù tí、 pēng tiě què。

烤乳猪:麒麟小猪第一,如意小猪第二,满汉小猪第三,绉纱小猪第四,小磨小猪第五,松子小猪第六,天花小猪第七,龙凤小猪第八。

kǎo rǔzhū: qílín xiǎo zhū dìyī, rúyì xiǎo zhū dì’èr, Mǎn Hàn xiǎo zhū dì sān, zhòu shā xiǎo zhū dì sì, xiǎo mó xiǎo zhū dìwǔ, sōng zǐ xiǎo zhū dì liù, tiānhuā xiǎo zhū dì qī, lóngfèng xiǎo zhū dì bā。

八押桌碗:烩蝴蝶海参、红烧沙鱼皮、氽蛤士蟆、清蒸四喜、红烧天花鲍鱼脯、酿芙蓉梅花鸡、烩荷花鱼肚、烩仙桃白菜。

bā yā zhuō wǎn: huì húdié hǎishēn、 hóngshāo shā yú pí、 tǔn há shì má、 qīngzhēng sì xǐ、 hóngshāo tiānhuā bàoyú fǔ、 niàng fúróng méihuā jī、 huì héhuā yúdǔ、 huì xiāntáo báicài。

 

八样烧烤:四红:烧小猪、烧鸭子、烧鲫鱼、烧胸叉。四白:白片鸡、白片羊肉、白片鹅、白片肉。四碟:片饽饽、荷叶夹、千层饼、月牙饼。

bā yàng shāokǎo: sì hóng: shāo xiǎo zhū、 shāo yāzi、 shāo jìyú、 shāo xiōng chā。 sì bái: bái piàn jī、 bái piàn yángròu、 bái piàn é、 bái piàn ròu。 sì dié: piàn bōbo、 hè yè jiā、 qiān céng bǐng、 yuèyá bǐng。

八大件:清炖一品燕菜、南腿炖熊掌、溜七星螃蟹、红烧果子狸、扒荷包鱼翅、清炖凤凰鸭、清蒸麒麟松子仁杏仁酪、石榴子烩空心鱼肚。

bā dàjiàn: qīngdùn yīpǐn yàn cài、 nán tuǐ dùn xióngzhǎng、 liū Qīxīng pángxiè、 hóngshāo guǒzilí、 bā hébāo yúchì、 qīngdùn fènghuáng yā、 qīngzhēng qílín sōng zǐ rén xìngrén lào、 shíliuzǐ huì kōngxīn yúdǔ。

四个随饭碟:炝苔干、拌海蜇、调香干、拌洋粉。

sì gè suí fàn dié: qiàng tái gàn、 bàn hǎizhé、 diào xiānggān、 bàn yángfěn。

 

四个随饭碗:金豹火腿炒南荠、南腿冬菜炒口蘑、冬笋火腿炒四季豆、金腿丝溜金银绿豆芽。

sì gè suí fànwǎn: jīn bào huǒtuǐ chǎo nán jì、 nán tuǐ dōng cài chǎo kǒumó、 dōng sǔn huǒtuǐ chǎo sìjìdòu、 jīn tuǐ sī liū jīnyín lǜdòu yá。
